The program brought chefs from Brazil, South Korea, Canada and the United Kingdom to Italy for hands-on collaboration, mentorship and an exploration of Prosecco DOC pairings across global cuisines.
VENETO, Italy, Oct. 20, 2026 /PRNewswire/ — The Prosecco DOC Consortium has concluded the inaugural edition of its Chef Residency program, bringing international chefs and emerging culinary professionals together in Italy to exchange techniques, develop menus and explore food and wine pairings. The program will return in 2027 with editions dedicated to the United States, Switzerland, Japan and China.
Developed in collaboration with Tuorlo Media, with additional support from the Associazione Maestro Martino, chaired by Chef Carlo Cracco, each residency combined an exploration of the Prosecco DOC growing region with masterclasses and collaborative cooking at House of Mediterraneo in Milan. The experience culminated in a dinner pairing dishes created by the visiting chefs and students with different expressions of Prosecco DOC.
The four residencies gave students practical experience working alongside international chefs, sharing techniques and creating menus inspired by Brazilian, South Korean, Canadian and British culinary traditions.
“Chef Residency has shown how Prosecco DOC can become a truly universal language, bringing different culinary cultures into dialogue through the values of openness and conviviality that define us,” said Giancarlo Guidolin, President of the Prosecco DOC Consortium. “We are proud to celebrate our roots while opening ourselves to the world, fostering new connections and opportunities for the next generation of professionals to grow.”
Among the participants was Alessa Pomerantz, an American private chef and culinary strategist based in Milan, who took part in the Brazilian, South Korean and British residencies.
“What made the Chef Residency special is that it was an exchange, not a showcase. For a week at a time, we cooked side by side with chefs from abroad at The House of Mediterraneo in Milan, trading techniques and building a menu that ended in a dinner with Prosecco DOC at the center of the table,” said Pomerantz. “As an American chef who has made Italy home, I found it meaningful to see Prosecco DOC become a bridge between cuisines. It worked with every menu we built, proof that Italian wine belongs at any table.”
Looking Ahead to 2027
The next edition will introduce US culinary perspectives alongside traditions from Switzerland, Japan and China. For U.S. chefs, the program offers an opportunity to share their culinary identity in Italy, exchange ideas with fellow professionals and explore new approaches to food and wine pairing.
U.S. chefs interested in the 2027 edition can contact redazione@tuorlomedia.it for further information. Application details and program requirements will be announced at a later date.
