For the last 13 years, Atelier September has given Copenhagen’s café culture an international following. On November 7-8, chef Frederik Bille Brahe brings that world to New York, inviting New Yorkers to experience a morning or afternoon as they would at his Copenhagen institution. Organized by food guide TIPSTER, the two-day pop-up takes place at Altbau, the forthcoming Williamsburg bakery from Tartine cofounder Chad Robertson.
NEW YORK, Oct. 20, 2026 /PRNewswire/ — Atelier September has become a reference point for how Copenhagen eats by day, helping shape a café culture whose influence reaches far beyond Denmark. This November, New Yorkers will have a chance to experience it in their own city.
On November 7-8, Frederik Bille Brahe will transform the upstairs of Altbau Bakery in Williamsburg into a temporary home for Atelier September. Serving breakfast and lunch from 8 am to 4 pm, the takeover brings the café’s cooking and atmosphere into a working New York bakery.
“I love New York. It’s a city I keep coming back to and always leave inspired by,” says Bille Brahe. “New Yorkers have traveled to Copenhagen to eat at Atelier September for many years—this time, we get to make the journey. I’m really looking forward to cooking the food we make every day in Copenhagen and bringing a little bit of Atelier September to New York.”
Since opening in 2013, Atelier September has remained a fixture for locals while becoming a first stop for visitors from around the world. Frederik Bille Brahe’s approach combines seasonal produce, simple cooking, and a distinctive visual sensibility.
At Altbau, that approach meets the baking of Chad Robertson, whose work at San Francisco’s Tartine has influenced a generation of bakers. His new Williamsburg bakery will supply sourdough, rye bread, and croissants, making its bread part of the dishes that have earned Atelier September its following.
“Atelier September is always my first stop in Copenhagen—singular and exceptional,” says Robertson. “I’m thrilled to have Frederik cooking upstairs. Our bread goes straight from the oven into his dishes, bringing the two parts of Altbau together.”
“It’s an honor to do this pop-up at Chad Robertson’s new bakery. I’m a big fan of Chad and what he has done,” says Bille Brahe. “Bread has always been such an important part of the table at Atelier September, and Chad is basically the bread Jesus. He has influenced the way an entire generation thinks about bread and baking, myself included. To come to New York and do this together feels very special.”
“I trained as a cook before diving into long-fermented grains and bread, and I’ve always operated my bakeries more like restaurants, with hot food coming out of the ovens all day,” adds Chad Robertson. “Collaborating with inspiring chefs around the world has been a highlight of my work since the early days.”
Atelier September will serve its Copenhagen breakfast and lunch staples throughout the pop-up. The Morning Plate combines sourdough with 24-month-aged Comté, a soft-boiled egg, whipped butter, and jam. Seasonal omelets come with sourdough, avocado is layered over rye, and thick almond pancakes arrive with berries and cream. Yogurt and granola are served with the café’s signature zucchini jam, while a green dish of the day follows the season’s produce.
The event is organized by the Copenhagen-born food guide TIPSTER, continuing an exchange between Copenhagen and New York. Earlier this year, TIPSTER brought Brooklyn’s Taqueria Ramirez and New York pizzeria Ceres to Copenhagen for pop-ups. Atelier September makes the journey in the other direction.
The Atelier September pop-up follows TIPSTER’s NYC BAKERY RUN on October 25, which connects ten bakeries and pastry destinations along a half-marathon route, including a pastry course inside Eleven Madison Park. The event attracted 26,000 lottery entries for 100 available spots.
Together, the runs and pop-ups put the people behind the food at the center of discovery, inviting audiences to experience familiar cities through new collaborations and encounters.
